Baking on Friday: Blueberry Scones
I owe my baking project today to Suzanne from You Made That? Suzanne posted her recipe for Blueberry Scones back in January of this year. I had leftover blueberries from last week's baking project and I was looking for a way to use them. Also, I had some cream left over, and so it gave me a way to use up two ingredients I already had on hand.
Suzanne promised light, fluffy, and moist scones with this recipe, and they really deliver. I happen to love scones, but often find them to be tough and dry. These were light, like the lightest of buttermilk biscuits. With just half a cup of sugar to the whole mix, they weren't too sweet either. It'll be nice to have these around over the weekend for a nice morning snack with our cuppa joe.
My notes about the recipe: I had a little trouble incorporating the blueberries without smashing them, and this caused the dough to get wetter and wetter as I went. It didn't hurt the finished product, however, and so I wouldn't worry about it for next time. Suzanne suggests at least partially freezing the blueberries first to prevent this from happening. Also, I tossed the blueberries with a small amount of flour before incorporating them since I've learned that this will help keep the blueberries from turning the dough blue.
With blueberries in season now, I can highly recommend this recipe to those of you who like sweet treats in the morning . . . or any other time of the day, for that matter!

mmm... I love scones. I always make them plain but I'd put the blueberries on top of them with some cream and a nice cup of tea!
