Busy Slow Day

Good morning, my friends. It was all slow stitching yesterday, but that was after we got home from our in-town business. We were home and had our groceries put away before 11:00 a.m. It was almost as if it never happened. We left before I could do any slow-stitching, however, which is never a happy thing. When we returned home and could relax, it was my first stop. Slowly but surely, I'm making my way across this bridge.


It was lunch time by then. While I ate my lunch, I baked some muffins. These are Morning Glory Muffins. This is a recipe I snagged off the Cooking Light Diet website before it was taken down.


It makes 18 muffins. When I gathered my ingredients while grocery shopping, I'd only planned to make half. But then I decided to make the whole thing. The recipe called for a full cup of fat-free plain yogurt, and I only had half the amount I needed. Sour cream can stand in for plain yogurt, but I decided to add in a half cup of unsweetened applesauce. The batter really needed just a little more moisture. I substituted golden raisins for the chopped dates and dried apricots for the dried pineapple. It was what I had on hand. Also, I used two egg whites in place of a whole egg, and so these are essentially fat free. There is, of course, some fat in the nuts, but otherwise, no butter or oil of any kind. The recipe is no longer online, but I'll give it to you here.

Morning Glory Muffins
Yield: 18 muffins

Ingredients:

Cooking spray
1 cup whole wheat flour (about 4 3/4 ounces)
1/2 cup all-purpose flour (about 2 1/4 ounces)
1 cup regular oats
3/4 cup packed brown sugar
1 tablespoon wheat bran
2 teaspoons baking soda
1/4 teaspoon salt
1 cup plain fat-free yogurt
1 cup mashed ripe banana (about 2)
1 large egg
1 cup chopped pitted dates
3/4 cup chopped walnuts
1/2 cup chopped dried pineapple
3 tablespoons ground flaxseed (about 2 tablespoons whole)

Directions:

Preheat oven to 350°.

Place 18 muffin cups liners in muffin cups; coat liners with cooking spray.

Lightly spoon flours into dry measuring cups, and level with a knife. Combine flours and next 5 ingredients (through salt) in a large bowl; stir with a whisk. Make a well in center of mixture. Combine yogurt, banana, and egg; add to flour mixture, stirring just until moist. Fold in dates, walnuts, pineapple, and ground flaxseed. Spoon batter into prepared muffin cups. Bake at 350° for 20 minutes or until muffins spring back when touched lightly in center. Remove muffins from pans immediately; cool on a wire rack.

Okay, and after such an exciting morning, I needed a nap. It was actually Sadie's idea. She likes to get behind my knees when I'm napping. When we woke up, I went to work hand sewing the binding for the Domestic Affairs quilt. Now I've turned the third corner, and I should be able to finish this up today.

Since the Domestic Affairs quilt was just for fun, I believe I'll give it to the new mama. It seems to have some good advice for a first-time mother caring for a newborn:







Yeah...I think I'll give it to her. And if she doesn't want it, she can give it to someone else.

So that's all that happened yesterday. Today I'll probably get started sewing the "Snow Happens" runner into a finished quilt top. Aside from that, there's not much going on. Sounds like a perfect day to me.

What a pretty quilt--and yummy looking muffins--me--I'd sneak some chocolate chips in them!!!lol
Did you see there will be NO Crabapple Feb stitch along--in fact they are closing the business entirely--ouch!! so sad to see it go--
I found about 7 more patterns I would like--but???

mmm - I haven't had a morning glory muffin in SO long. Thanks for the reminder (wanders off in search of the Resident Chef).
That's such a pretty quilt and I don't see why the new mother wouldn't be thrilled to have it.

The muffins look yummy! My Guy is making chocolate biscotti this morning for our coffee breaks this week. Hope the meet up with friends went well and you are back to moving along on all your projects.

My world will come to an end. No Crabapplehill? I was just finishing up several of her projects. Well, it's not like I have several centuries of her patterns to keep me busy. Sigh.
