Signing Off for a Few

Most of Monday was spent procuring, preparing, and packing food. Nevertheless, there was time to finish up the latest Snow Globe block in the morning, and now that one is joining its friends in the finished column. This one is called "Woodland Snowman."


We're heading up to Mayfield Lake for a day or two, and we're taking our boat with us. We were there last summer. If you'd like a little tour of the lake, you can read my post from last year's trip. Towing the boat means we'll be in the smaller truck camper, and that means things are a little more tightly packed.

As for the food, I wanted to make good use of the CSA veggies from last week. We'll be roasting some cauliflower and some summer squash. Also, I have a taco salad and some hamburgers planned, and those will help us use some of the lettuces and sweet onions. I'll make a cucumber salad to go along with the hamburgers. There were also green onions in our share this time around. I like to chop up the tops to stand-in for chives when we bake potatoes. A nice surprise in last week's share was some nice curly parsley. When I saw that, I knew I was going to make a favorite salmon recipe. This appeared in Bon Appetit decades ago. I went in search of the recipe and couldn't find it, so I'll give it to you. It's a nice way to use crisp fresh parsley. Oftentimes, parsley serves as a decoration on food, but its flavor and texture come forward in this recipe.

Salmon with Garlic Mayonnaise
Recipe from Bon Appetit
Serves 4

1/2 cup mayonnaise
1/4 cup fresh parsley -- chopped
1 teaspoon lemon juice
1 teaspoon Dijon mustard
1 garlic clove -- minced
Salt and pepper
4  salmon steaks or fillets

Combine first 5 ingredients in a bowl.  Season with salt and pepper.

Meanwhile, place salmon steaks in large dish and microwave to desired doneness (about 3 minutes per side), until fish flakes easily with a fork.

Transfer to plates.  Spoon garlic mayonnaise on side.

Although the recipe has you preparing the salmon in the microwave, you can prepare it any way you like. Mike will be grilling ours this time around, and I've roasted it in the oven too. However you prepare it, the garlic mayonnaise is really nice with this dish.

Also, I baked some zucchini bread. We wouldn't want to run out of snacks, now would we?


Our CSA share had some of the first zucchini of the season, and so zucchini bread seemed like a good idea. It's one of those things I have to bake at least once per year. It'll be nice for breakfast while we're camping.

The kitties are going with us on this outing. They're 'zausted just thinking about it.


They decided to catch up on their napping while they still have the chance.

Have a great trip ... everyone deserves a little time away! Enjoy especially your boat time ... one thing I didn't consider with the shoulder surgery was that boating in the summer would be a no-go. Ah well. Have a BLAST!!! :)

Enjoy your time at the lake! While you're there, I'll be prepping for our time at the Lake (Lake Superior, that is). Thanks for sharing the chutney recipe. It is delicious, and so easy to make! (Simmering those cherries made the pitting process a breeze!) Relax, have fun, then come back and tell us all about it!

Have a great trip! (tho, truth be told, I'm guessing you're on the way back already when you read this!) We just bought salmon today, as hubby and Bailey dearly love it. Me, not so much. Wish I'd read the recipe prior to the shopping! Maybe next time...

With the heat down here, it is truly nice to look at your SNOW globes & let my imagination consider the coolness!

Yum, that salmon recipe sounds really good. I think that even I could cook that in the microwave & being a big mayo fan, that sounds great too. I might have to try the mayo on other stuff too.

Such lovely snoozing cats! I have been kitty-sitting this weekend myself. As usual, Possum was giving me the evil eye & hiding mostly - until I brought out the treat bag. But Ries has been my buddy & even watched TV with me.
