Occupy Your Sewing Room Begins Saturday with a Fourth Prize Added


Will you be joining us next week?  Several occupy members have suggested having snacks and coffee ready so you won't get hungry during the day.  Chocolate is an especially popular suggestion!  And just so you won't have to interrupt your sewing room occupation to cook, I'm giving you my Overnight Lasagna recipe.  You can make this up a day ahead and then pop it in the oven for dinner the next day.  Save yourself even more time by using no-bake lasagna noodles!  Add a side of garlic toast or a salad, and you've got yourself a fast dinner.

Overnight Lasagna

Servings:  8   

1 pound  ground beef
1 medium onion (about 1/2 cup) -- chopped
1 clove  garlic -- minced
2 jars Commercial spaghetti sauce
12 lasagna noodle (about 12 oz) -- uncooked
1 container cottage cheese (12 oz.)
2 cups  Mozzarella cheese (8 oz.) -- shredded
1/4 cup  Parmesan cheese -- grated

Cook and stir ground beef, onion and garlic in Dutch oven until beef is brown; drain.  Stir in spaghetti sauce.  Heat to boiling, stirring occasionally; reduce heat.

Spread 2 cups of the sauce mixture in an ungreased rectangular baking dish, 13x9x2 inches.  Top with 4 noodles.  Spread half of the cottage cheese over noodles; spread with 2 cups of the sauce mixture.  Sprinkle with 1 cup of the Mozzarella cheese.  Repeat with 4 noodles, the remaining cottage cheese, 2 cups of the sauce mixture and the remaining Mozzarella cheese.  Top with the remaining noodles and sauce mixture; sprinkle with Parmesan cheese.

Cover and refrigerate up to 12 hours.

When ready to make dinner, preheat oven to 350 degrees.  Bake covered 30 minutes.  Uncover and bake until hot and bubbly, 30 to 40 minutes longer.  Let stand 15 minutes before cutting.

Recipe may be halved.  Just use an 8 x 8 baking dish.

While I would love to occupy my sewing room this weekend I will be experiencing Occupy GrammyWorld instead. I will have my 3 1/2 yr old granddaughter her for the weekend and that is about the only thing that will get me out of the sewing room for a whole weekend if I am at home!

Added riccotta and mozzarella to the grocery list in anticipation of a pan of lasagna later this week. I must get out into my studio-i love to read so m uch that i would rather read than eat or sleep or sew or crochet !~!
