The Three Cats Ranch Restaurant is open today.  We are having dinner guests, and despite my efforts to keep it simple, it has taken up almost all of my time the past two days with shopping, cleaning, and cooking. On tonight's menu is the following (with image credits given, because things aren't finished yet and so there are no pictures).

Spicy Hummus Dip

I was kind of surprised to find the link to the recipe online because I found this recipe in a publication put out by Raley's grocery store chain while we were traveling once.  I like Raley's, but we don't have them in our local area.  I serve the dip with pita chips.

For our meal, we're having Cool Cucumber Salad made with mint, basil, and tomatoes from my garden.  The rest of the ingredients were store bought.  Also, Crispy Smashed Potatoes






For our main course, we're having Margarita Grilled Shrimp



I'm not serving it the way it's pictured.  I have the shrimp on skewers and marinating right now.  When our guests arrive, Mike will grill them on the barbecue.

Finally, you didn't think I'd leave out dessert, did you?  Perish the thought.  This morning I made a Blueberry-Peach Cobbler.



Looks pretty good doesn't it?  This recipe makes a big cobbler.  I halved it and put it in a 9 x 9 inch baking dish.  We'll have that with a scoop of vanilla ice cream.

Did I make you hungry?  Well, I'm hungry.  That's about all that's been going on here for the past two days. And now, I need to get back to my scones.  I hope you're having a good weekend.  I'm looking forward to an easy-going Sunday.

Sounds like y'all had a deeeelicious dinner tonight!

I started cutting out 2 pairs of boxers for my 2 great-nephews. Both have b'days this month & are SF Giants fans, so the boxers are going to be orange & black. I am not having fun with them though - I'm having to cut with SCISSORS!!!! But my friend Mary Ann is helping me, so I'll hopefully get to finish them on Monday & in the mail on Tuesday.

I bet your dinner party went very well with that menu. It's made me very hungry just reading about it. Mmm it's nearly time for lunch, wish I could have your menu but guess I'll just make some cheese on toast. Enjoy you low key Sunday.

oiks, you forgot to tell us what time to arrive! my goodness, everything looks so yummy! Barby-skewered grilled shrimpies are my very favorites! I'm interested in those smashed potatoes, tho... just boil, smash a little & broil maybe?? and mmmm...bb & peaches...YUM!

You deserve some time off after all that!
