Usually when I post about recipes I've tried, I like to go into a little more detail and use my own pictures.  In this case, it was so delicious and simple that I wanted to tell you about it right away.  The recipe appeared in the May, 2013 issue of Sunset magazine, but you can find it right here.  

There were a couple of things I liked about it in addition to its deliciousness.  For one thing, it used up the bits of bell pepper that were waiting to liquefy in my vegetable crisper.  (You know what I mean, don't you?) For another, I'm so happy to be finding the bags of baby kale in my local grocery store now.  I like kale served up any which way, but Mike has been a little slower to warm up to it.  He loved this dish that I made using the bagged baby kale.  It is so healthy...what's not to love?  

Finally, I have a rice cooker, which made it even easier.  But even without a rice cooker, you can have dinner on the table from start to finish in about 25 minutes.  Just get your rice cooking, and while you're doing that, you can get the remaining of the ingredients prepared.  When the rice is ready, start cooking them.  It takes about five minutes to saute and wilt the peppers, garlic, and kale, then just a couple of minutes more to fry the eggs.  Slide those babies into the bowl with the rest of the goodies, and dinner is served.  A delicious one dish meal, Baby.  Great for summer.

The past two days have had me busy running around doing errands and hanging out with peonies.  Peonies really know how to party, I'm telling you.  No sewing for me since Sunday.  Having the power out for six hours on Monday afternoon was a serious impediment.  In any case, the next two days are free and clear.  Big Bertha better be ready for a smoking couple of days of sewing.

I think I have one of those bell peppers in my fridge now ... along with everything else I need to make this. It could be dinner tonight–thanks for including the link to the recipe.

That recipe is fascinating. No green peppers at the moment, though. I'll try to remember this when I get some. I could live on stuff like this! Hugs, D

This recipe is music to my ears. It suits what we like to eat and on days I'm working dinner has to be quick to prepare so 30 minutes or less.

That does sound good (sans bell peppers)! I need to get to the store & get more rice - Jasmine rice is my favorite. :D
