Recipe Test: Apple Pie Bread

When Jamie posted a recipe for Apple Pie Bread on her blog, My Baking Addiction, I knew my diet was about to suffer.  I mean, how can you go wrong with a recipe that starts with the words "apple pie"?  Is that even possible?

Since it's a dark and stormy day (Oregon gloom), it seemed like a good day to give it a try.  If the house is going to be dark, it might as well smell good.  That's a new rule I just now made up.

For this recipe, you'll want to get out ALL of your small appliances, and ALL of your measuring cups, and ALL of your bowls, and ALL of your spices.  And if there's anything left in your cupboards, you might as well get that stuff out too.  I'm sure you'll need it at some point in time.


Yes, it did turn my kitchen into a category five disaster area, but do you see the bread way back there baking in the oven?  Mmmmmmmm.  I didn't mind cleaning up while I waited for it.  Some things are worth making a mess for.

So here's how it looked fresh out of the pan.


It has two cups of shredded apples.  It's easy to shred apples with a food processor.  And it had a streusel topping, which I made with my mini food processor.  I put in everything except the nuts and pulsed it until it was the right consistency, then added the nuts in a separate bowl.

I was supposed to let it cool completely, then wrap it in foil and wait 24 hours before cutting into it.  Uh, right.  Like that's going to happen.  No, I let it cool for about 15 minutes, then cut into it right away.  Excuse me, but Yum.  Oh my gosh.  Is this ever good.  In addition to the shredded apples, it has dried cranberries and pecans.  Here's how it looks when you cut into it.

Oh man, and I don't have an oven ~ and won't until, well, a good guess is sometime between Mar and June 2013. :(

Lee-cook it stovetop in a bread pan set on butter knives in your stock pot with the lid on over medium heat. We did this for a decade while living offshore with no oven.

That looks positively sinful!!! I'm wondering if I have enough utensils in this house to try to make it :*) Definitely not enough spices, but that's why they make grocery stores, right? And small appliances are in short supply too.... oh well, I might have to make do with your picture - it certainly looks good enough to eat!

Oye! This looks amazing! I am an avid cook/baker who does not own a food processor, but that will not stop me from making this...today...after I make another batch of dried apples and applesauce. Thank you for sharing this scrumptious recipe! Looks like a definite keeper!

Wow that looks so good. I think I might have to try that recipe very soon. Congrats on your weight loss this week - hope the apple bread doesn't wreck it too much.

Mmmmmmhm! Let's just say you're in good company. Or maybe, you've wrecked YOUR diet & now it's time to start wrecking someone elses, after all, what's the point of having fun all by yourself?

I can almost taste the goodness & can't WAIT to make this myself. Yup, there's a bag of apples in the 'fridge just waiting to be made into something interesting!

I noticed my blood sugar and my weight creeping up just from reading the post and gazing longingly at the pictures....I guess I'd better not push my luck and actually make the bread!

Ummm, I'm pretty sure that my kitchen isn't big enough to make that lucious-looking bread! But I sure can almost smell it from here... slurp!
