Baking on Friday: Buttermilk Blueberry Breakfast Cake


Today's baking project comes courtesy of Alexandra's Kitchen blog.  I found this recipe while browsing Pinterest the other day.  Since I love having something sweet for breakfast on the weekend (and weekdays too, for that matter), and because blueberries are in season, I decided to try it for this week's baking project.

The cake goes together so quick and easy that one could put it together and eat it in the same morning.  Since I'm always too bleary-eyed in the morning to attempt anything other than finding my way to the coffee maker, I opted to make it today to be consumed tomorrow.  (No, not all of it.) 

Start with two cups of fresh blueberries.


Then cream together the zest of one lemon, the sugar, and the butter (room temperature).


Add an egg and some vanilla.  While that's mixing, toss the blueberries with a quarter cup of flour.  (It keeps them from sinking to the bottom of the mix, and it also keeps them from turning the batter blue.)  Then, measure out the remaining flour, baking powder, and salt and whisk that together.


You'll also need a half cup of buttermilk.  (I love buttermilk.  Not only does it make for yummy baked goods, it keeps for a long time in the refrigerator, even after it's been opened.)



Add the buttermilk and the dry ingredients to the rest of the mix and then fold in the blueberries.


Spread it into a baking dish and sprinkle it with sugar.  I always use Demerera sugar for finishing something.  I like the way it sparkles, and I also like the little crunch it gives things.  



Then bake it at 350°F for 35 minutes.  (I have a slow oven, and so mine baked for more like 50 minutes.)  Check it with a toothpick to make sure it's done and Voila!  Yummy breakfast cake, which is bound to improve your morning.


Mae and I are going to the farmer's market tomorrow.  We haven't been for over a month.  I'm excited because there should be lots of berries available now.  I'm hoping for some pie cherries and some blackberries.  I have a couple of other baking projects up my sleeve if those things are available.  It might end up being a week of baking!

That looks yummy! I'll have to try this recipe. I made the blueberry scones a couple of weeks ago. They were delicious!

While that looks reeeeallly yummy, the thought of turning on my oven right now? Nope, I don't think so!

Enjoy it in the morning & have an extra piece for me! lol

Oh Yummo! Must try that! Might have to be frozen blueberries for us though... not quite the same.

Oh now this is my idea of good.Im like you I like just a bit of sweet for breakfast then I can get away with none all day.Im jotting this down.Thanks for sharing!
