Recipe Test: Ravioli with Arugula, Tomatoes and Pancetta


I watched Giada De Laurentiis make this dish on the Food Network the other day.  It looked good on TV, and so I tried it.  It was so simple, and so flavorful.  You can put the whole thing together in about 20 minutes.  Here's Giada's recipe.

It's made with packaged ravioli, canned tomatoes, pancetta, and arugula.  You could substitute baby spinach for the arugula and you could substitute bacon for the pancetta.  I made it as is, and it was delicious.  I wouldn't change a thing.  I did add freshly grated parmesan cheese (because I don't think you can eat Italian food without it), and I liked that addition.  The pancetta is a little milder and more tender than conventional bacon, and I really liked the flavor and chew it added to the dish.

I like this recipe because you could easily get away with serving it as a one-dish meal.  I added some garlic bread.  A simple side salad would also go well, but neither is necessary.  Everything you would want for a balanced meal (veggie, meat, starch, dairy) is already included in the dish.  Also, everything is readily available in your supermarket.  This would be a good dish for me to make when we are traveling, and I'm always on the lookout for those.

I have no idea if our store would carry pancetta or arugula, so I was glad you gave substitutions. I will look for the original ingredients, but am glad for the backup.
