This is another recipe I got from Bon Appetit years ago. It's been long enough that it doesn't appear in a search of their recipes online. I have no idea how long it's been. This is such an easy dish to prepare that I've been making it for years. You can use any leftover mayonnaise on sandwiches, and it's good mixed into canned tuna.
Salmon with Garlic Mayonnaise
Serves 4
1/2 cup mayonnaise
1/4 cup fresh parsley -- chopped
1 teaspoon lemon juice
1 teaspoon Dijon mustard
1 garlic clove -- minced
Salt and pepper
4 salmon steaks or fillets
Combine first 5 ingredients in a bowls. Season with salt and pepper.
Meanwhile, place salmon steaks in large dish and microwave to desired doneness (about 3 minutes per side), until fish flakes easily with a fork. (Or use your own method for preparing the salmon.)
Transfer to plates. Spoon garlic mayonnaise on side for dipping.
Serve this dish with some steamed broccoli or rice (or both) for a tasty and healthful meal in minutes.
